We enjoyed it so much that we wanted to re-create the experience for our family who will probably not ever get to New Orleans, so we sent my mom and some other family members baskets from Cafe Du Monde with Chickory Coffee, Beignet Mix, and Cafe Du Monde mugs. We decided Saturday was the perfect time to use them! We had a lot of fun and the beignets were good, although they didn't get as puffy as they did when we made them in MS. Maybe the lack of humidity in WI didn't help... In any event, it was a tasty breakfast!
Later that afternoon, we decided to drive to one of the many marshes in the are and take the dogs for a walk. It was actually almost warm (just over 50!) so it was a good day to go. We walked around the marsh on a floating board walk and saw some wildlife (muskrats, cranes, etc.) and enjoyed being outside. My camera batteries died, so I didn't get too many good pictures, but here is one of the muskrats we saw (okay, you may have to trust me, the muskrat didn't turn out so good, but he's in there!):

And a "family photo"--Lloyd, Bingo, Me, and Byron:
It was a fun day. Later that night, we went out to dinner with Grampie at "Dos Gringos," a Mexican-style restaurant run entirely by gringos. It was a little weird to have people with thick WI accents taking enchilada orders, but the food was great and we had a lot of fun.
This coming week mom is on vacation for Easter break, so it will be fun to do some stuff with her. LL is already on his way back to Chetek for his next week of internship. Man will I be glad when we are both in the same place again! We have been going in opposite directions since February! Anyway, I believe mom and I may need to do some shopping this week, so I will keep you posted on any great buys that we find.
